Katy is a self-described fungi superfan. Majoring in bioengineering and biochemistry at Washington State University, Katy is currently testing fungus-grown biodegradable nesting habitat for native pollinating insects. Previously, Katy grew a 7.5-foot boat out of fungi, which was on display for three years at the Nebraska State Fair. Her “Myconoe” (mycelium + canoe) also holds a Guinness World Record for the world’s longest fungal boat. Katy intends to leverage her enthusiasm for fungi to benefit the environment and inspire others to consider the possibilities of fungal material and bio-fabrication. During her free time, Katy loves crocheting, hiking, foraging, and reading.
